This has been bothering me the whole game.
The mafia does NOT get to use the jester as shield in case of a red result.
All town has to do is demand the mafia to kill the red result next night. If they are still alive next day, it means either that was the goon, or mafia is gamethrowing. Mafia has to kill the result if they are the jester, because if town fulfills their promise and yeets the jester, the mafia loses too.
So the cop is actually pretty damn effective against jesters, unless they make the reveal in LyLo.
