I just made a giant batch of garlic & roasted pepper hummus. OMG, homemade hummus is so much better than store bought.

I have got a bushel and a half of organic tomatoes to process today, and probably another bushel next weekend. Won't have to buy another tomato product for a year, but jeez, this is hot work.

Sauce, diced tomatoes, pico, salsa, puree. At least I am just freezing them, I used to can them, that was hot & horrible, lol.

I am making a cottage pie tonight, a shepherds pie, but with beef. It's Irish food season, but corned beef brisket is an Americanized version. In Ireland it's more likely to be salt port or salt mutton. So I stick to Cottage Pie, and Guinness Chocolate Mousse. YUM!!!

Don't go TOO sweet, it is easy to do that with Salmon, which is kinda sweet-ish to begin with. I made an orange sauce once with salmon that was perfect with maha mahi, swordfish or even tuna, but came out too sweet with salmon. Cloyingly sweet, tbh. Maybe if you use the mango (which would be yummy) throttle back a tad on the honey.
