Cilantro

What's up with the cilantro hate????

Are you a hater or lover?

Why do u hate cilantro pls explain and is it just in its raw form or raw and cooked?

Genetic differences affect the perceived flavor of cilantro. Gene OR6A2 is an olfactory receptor gene that codes for a receptor sensitive to aldehydes, which are the compounds largely responsible for the aroma and flavor of cilantro.
Sensitivity to aldehydes causes the soapy scent and flavor to overpower any pleasant herbal notes.

I had despised cilantro most of my life. But at a certain age, my taste buds rapidly shifted and it is welcome on any plate that calls for it.

i never understood the soapy comparison when people described the taste.

This is me. For years I was super picky about salsas because I found that some tasted like dish soap. Later someone mentioned this about cilantro and I realized that was why. Particularly fresh cilantro is difficult for me to eat because it’s so soapy tasting.

Even without the soapy gene, I understand where people are coming from on that. But cilantro is delicious. I do also have a friend who has the soapy gene and still enjoys cilantro.

I enjoy cilantro, but I wouldn't put it in every dish. It's also easy to over-do it, and it can be over powering.



My rabbit loves it tho, absolutely nutty for the stuff

Cilantro just has to be used the right way and it's delicious. For example, we make a cold sauce of sorts with chopped avocado, a little chopped onion, some olive oil and chopped cilantro to put on fish - particularly good on salmon. That's just one example of many. The key for my taste is I don't want to eat big leaves and stems so we carefully tear the leaves away and chop them. Truly wonderful stuff.

Edit: forgot to answer dunya's question, I don't think I've ever had it really "cooked" so always raw.

Cilantro isn't for every dish but it's very good and common in Lebanese food so yes I love it :)

Your dad doesn't like it a lot.

In Lebanese cuisine the cilantro is mostly sautéed with garlic in dishes instead of eating it raw like in other cuisines

As it turns out, I have the gene that makes cilantro taste like soap. Up until last week, it's always tasted bitter, but I've been on a banh mi kick lately and they often forget to omit the cilantro. It's had a distinct overpowering soap taste that ruins all other flavours.

I preferred when it was just bitter. At least then I could ignore it. :shrug:

I know this is a super polarizing herb, but I've not been fussed either way. It's a very mild, delicate flavor to me, so I'll never say no to some fresh cilantro on a street taco, but I've never thought to buy it and use it either (I have a friend who likes making cilantro vinaigrette or cilantro aioli).

Even trace amounts of cilantro are the most overpowering thing on the dish. There’s just no way to keep it balanced… literally all I can taste is cilantro when it’s in there, and it’s not very nice.

So I guess in science parlance I’m one of those people with funny tastebuds.

But I think I may be like epi because it’s no longer quite as overpowering as it used to be so maybe I’m heading towards edible.

I have a few dishes with it in it that I like a lot. I never tasted soap though.
