Tonight I prepared Marsala-braised country style ribs with mushrooms, tortellini and baby spinach. Cabernet to wash it down.

I prepared eggs Benedict for the family.

Tonight, chicken thighs braised in Merlot with brown sugar, paprika, roasted garlic and onions. Served with rice and green beans.

I made a chicken velouté with onions, garlic, and potatoes. It was most satisfying.

French mother sauces are hilarious to me, as a southerner. They sound so fancy, yet we call two of them "gravy."
