Dandelion Wine

3 qts dandelion flowers
1 lb white raisins
1 gallon water
3 lbs granulated sugar
2 lemons
1 orange
yeast and nutrient

Pick the flowers just before starting, so they're fresh. You do not need to pick the petals off the flower heads, but the heads should be trimmed of any stalk. Put the flowers in a large bowl. Set aside 1 pint of water and bring the remainder to a boil. Pour the boiling water over the dandelion flowers and cover tightly with cloth or plastic wrap. Leave for two days, stirring twice daily. Do not exceed this time. Pour flowers and water in large pot and bring to a low boil. Add the sugar and the peels (peel thinly and avoid any of the white pith) of the lemons and orange. Boil for one hour, then pour into a crock or plastic pail. Add the juice and pulp of the lemons and orange. Allow to stand until cool (70-75 degrees F.). Add yeast and yeast nutrient, cover, and put in a warm place for three days. Strain and pour into a secondary fermentation vessel (bottle or jug). Add the raisins and fit a fermentation trap to the vessel. Leave until fermentation ceases completely, then rack and add the reserved pint of water and whatever else is required to top up. Refit the airlock and set aside until clear. Rack and bottle. This wine must age six months in the bottle before tasting, but will improve remarkably if allowed a year. [Adapted recipe from C.J.J. Watermelon-Cucumber Cooler

Nothing screams summer quite like a pretty pink watermelon cocktail

INGREDIENTS

5 cups cubed seedless watermelon (about 1 1/2 pounds)
1 large English cucumber, peeled and cut into chunks
1/4 cup fresh lime juice (from 2 limes)
2 tablespoons honey
2/3 cup vodka
Ice
Cucumber slices, for garnish

DIRECTIONS

Set a large fine-mesh sieve over a large bowl or pitcher. In a food processor or blender, puree watermelon. Pour watermelon puree through sieve, pressing on solids with a rubber spatula (you should have about 2 cups juice). Puree English cucumber and pour through sieve into watermelon juice.
In a small bowl or measuring cup, stir together lime juice and honey. Add to watermelon and cucumber juices, along with vodka. Adjust sweetness with more honey if desired. To serve, fill four glasses with ice and top each with cocktail. Garnish with cucumber slices

Juicy Roasted Chicken

Ingredients
1 (3 pound) whole chicken, giblets removed
salt and black pepper to taste
1 tablespoon onion powder, or to taste

1/2 cup margarine, divided
1 stalk celery, leaves removed

Directions
Preheat oven to 350 degrees F (175 degrees C).
Place chicken in a roasting pan, and season generously inside and out with salt and pepper. Sprinkle inside and out with onion powder. Place 3 tablespoons margarine in the chicken cavity. Arrange dollops of the remaining margarine around the chicken's exterior. Cut the celery into 3 or 4 pieces, and place in the chicken cavity.
Bake uncovered 1 hour and 15 minutes in the preheated oven, to a minimum internal temperature of 180 degrees F (82 degrees C). Remove from heat, and baste with melted margarine and drippings. Cover with aluminum foil, and allow to rest about 30 minutes before serving.

How to Cook Rice Over a Fire
Want to learn to make dinner over a campfire? Forced to use your fireplace while your oven doesn't work? Follow the simple instructions starting with Step 1 to cook rice over an open fire.


Part One of Two:

Cooking the Rice

Build an even, low temperature fire. Don't use a roaring hot fire with licking flames, just one that can boil water. Keep moving the coals around to maintain as constant a temperature as you can.

Bring water to a boil. Use four times as much water as rice by volume.[1] (You need more than the rice can absorb because much of it will boil off.)

Add rice and cook uncovered for 12-14 minutes. Compared to a stovetop, the higher temperature will cook the rice faster, but the rice will lose some nutrients and fluffiness. On the bright side, it's easy to check on your rice frequently using this method.
Just as with any rice, you can add spices, butter, and salt to make it more exciting.

Remove from heat if the temperature gets too high. If you are having trouble controlling your fire, the rice can continue to cook off the flames for a few minutes, especially if you cover the pot.

The rice is ready to eat but there's still water left. Drain the rice in a colander or carefully tip most of the water out, using a wooden spoon to keep the rice in.

The rice is still chewy and hard when it should be ready. Add more water if it's boiled off and cook a few minutes longer.

The rice has burned! Remove from heat and run cold water on the outside of the pot to stop the rice cooking. Remove the good rice from the center.

Rice frequently burns. Boil the rice uncovered for 6 or 7 minutes, then remove it from the heat entirely and cover with a tightly fitting lid. The steam should finish cooking the rice in 10–15 minutes with no risk of burning

Cook Rice in the microwave

In a microwave-safe baking dish or medium bowl, combine 1 cup long-grain white rice, 2 cups water, and ½ teaspoon salt. Microwave, uncovered, on high (power level 10) until the rice is tender and the liquid is absorbed, 15 to 18 minutes.

How To Cook Rice on the Stove
What You Need
Ingredients
1 cup medium- or long-grain rice — white or brown
2 cups water
1/2 teaspoon salt
1 tablespoon butter or oil (optional)

Equipment
Small (2-quart or so) saucepan with a lid
Stirring spoon

Rinse your rice: It's good practice to rinse your rice in a strainer before cooking. This isn't strictly necessary, but it will rinse off any dusty starch on the surface of the rice along with any leftover chaff or stray particles. (Some rices have more starchy coating than others.)
Measure the rice and water: For most rice, use a 1:2 ratio of one cup of rice to two cups of water. Measure a half cup of uncooked rice per person and scale this ratio up or down depending on how much you're making. Some rice varieties will need a little less or a little more water as it cooks, so check the package for specific instructions.
Bring the water to a boil: Bring the water to boil in a small saucepan. Rice expands as it cooks, so use a saucepan large enough to accommodate. A 2-quart saucepan for one to two cups of uncooked rice is a good size.
Add the rice: When the water has come to a boil, stir in the rice, salt, and butter (if using), and bring it back to a gentle simmer.
Cover and cook: Cover the pot and turn the heat down to low. Don't take off the lid while the rice is cooking — this lets the steam out and affects the cooking time.
Rice is done when tender: Start checking the rice around 18 minutes for white rice and 30 minutes for brown rice. When done, the rice will be firm but tender, and no longer crunchy. It is fine if it's slightly sticky but shouldn't be gummy. If there is still water left in the pan when the rice is done, tilt the pan to drain it off.
Turn off the heat and let stand a few minutes, covered. This steams the rice just a little more.
Remove the lid and fluff: Fluff the rice with a spoon or a fork, and let it sit for a few moments to "dry out" and lose that wet, just-steamed texture.
Serve the rice: Leftover rice keeps well in the fridge for several days, so you can make extra ahead to serve later.
