omg. I was just talking about how much I love french onion soup last night!

I'm making chicken fajitas and fried potatoes tonight.

That said, both the fajita stuff *and* the potatoes are all frozen. :( I'll of course be spicing them up. But eff. I'm too tired to be assed to do any more tonight. :sigh:

I really really really want to cook again soon though.

I've topped mama!

I always loved her enchiladas, and I've never made them until now. I pureed broiled onion, tomatillo, and serano pepper. I filled corn tortillas with sauteed chicken thighs and various cheeses. Broiled that with the puree, topped my half of the dish with olives, and covered with the cheeses.

Wow.

Rob, that enchiladas dish sounds good. Yum.

Well today was a major coup in that I was able to make my first home-cooked meal in the three weeks since the accident.

I finally was able to make Egg/Avocado Boats that everyone has been crowing about, as seen here: http://keeprecipes.com/recipe/howtocook ... -egg-boats

Hint: If you make these, you don't need a stand, just slice a bit off the back hump of the avocado and it will now sit flat on your pan.

It's really nice! I would definitely recommend it. You probably have to scoop out a bit more avocado than you would think, but other than that, it's foolproof.

I just made my first fish chowder. At first I was nervous because, as much as I loved fish, this stuff stunk to high heaven. But now that it's finished, it smells wonderful. Will return after a while with a taste report. :noble:

I love chowder! Specifically corn chowder is my favorite. I decided to make it while living in Germany. Turns out it's really hard to find fresh corn there. Finally found a slightly old dryish ear and yeah it wasnt very good.

Glad your fish chowder was a success!

Today I made vegetarian English breakfast. It's so easy to come by and I can't find one place in Tampa Bay that does it.

It's:

* Hashbrowns
* Fried Bread
* Sauteed Mushrooms
* Sauteed Tomato Halves
* Baked Beans
* Eggs or Tofu Scramble
* Soysage Links


Tofurky just put out a new kind of links that are almost as good as the homemade and Quorn brand I can only find in England. I spent two hours preparing the feast and even got a "Not bad" from James. Woo.

My hashbrowns won't crisp up. Why won't they crisp up! Epi?

The potatoes need to be dried out as much as possible. When I make hash browns, I put the pieces between several layers of paper towels to absorb the moisture.

You makin' me hungry! I would eat all of this except mushrooms. And a corn allergy?? :overreact: Seriously, corn is in everything. Hmm, what fat did you use to cook potatoes? Butter, oil? Maybe you need more or maybe it's your heat level?

Mmm, good call. I usually fry stuff at high heat with coconut oil. The kind that is solid in cold temperatures and liquid at warm. I maybe shoulda used Safflower instead. Or Sunflower or whatever the heck it is I have.

I even tried to broil them at 450F in the toaster oven to crisp them up with no dice.

Yeah my workout regime lately has been NUTS and I've not been eating a ton with the cat stress, so I figured it was time I had a good meal (not that I am about to waste away or anything. hardly). It was yummy. I had a coffee latte and James had a chocolate chai latte.

Yea - I mean, I'd love to try it sometime. And the science is hecka cool. I just can't imagine paying 30 bucks for some steak flavored foam that would still leave me hungry ya know?

I totally get it. I usually like rustic over posh as posh can be a bit pretentious sometimes.

Plus, I'm from the Panhandle, so I'm not one to put on airs.

It turns out my baby has food issues with dairy, soy, and fruit combined with sugar as per some recent testing.

This means for the next 8 weeks, this veggie mama, cant eat dairy or soy at all, or sugar within 4 hours of fruit. :omg:

Yeah...i am dying a little. I'm becoming...vegan. :eek:

I did pretty well as a vegan! Does he have issues with goat? A lot of my friends that have LI babies fall back on goat milk/yogurt/cheese to supplement. I dig it too!

I'm on a liquid diet for 2 weeks starting Friday. It is going to be horrible.

This is how we roll in the Brown house. No need to order in when you can make everything from scratch :) Yummmm! I also made stuffed mushrooms this week and a ricotta mushroom sauce. We put it over fresh pasta that Rob made. It was delicious too, just didn't get a picture.

Killing me!! Pizza is my favorite. This looks delicious! We love (d) making pizza and then we can have veggies and meat split.

Week 1 of no dairy and soy is ok so far. I still have goat cheese it turns out. Husband made a delicious skillet tamale pie with corn, beans, red pepper, onions, spices, with a tasty cornbread topping.

It turns out not eating cheese is the hardest part. I love it so much. :hugs:

Thanks bea!! Thank god I can still eat gluten. But cheese...we have a local goat cheesemaker, so I may start spending all our money there. :D Also, takeout, wow so much harder now. This Mediterranean place we like does lots of dairy free and even checked for soybean oil. :dance: the things we do for baybehs. :p

Anyone have big food plans this weekend?

Hedgie - we made great use of Chipotle when we were entertaining the vegan friend. But you are right, takeout is damn near impossible. :(

Not this weekend, but on Tuesday we're doing a Chinese-style hotpot with my roommates. :lorab: Winter season is almost over, so we've got to get them in before it warms up.

I discovered a place near me with $1 sushi happy hour specials, so that was a lovely Sunday treat. I had tuna, salmon, mackerel, purple clam, shrimp, octopus and flounder.

I am making a cottage pie tonight, a shepherds pie, but with beef. It's Irish food season, but corned beef brisket is an Americanized version. In Ireland it's more likely to be salt port or salt mutton. So I stick to Cottage Pie, and Guinness Chocolate Mousse. YUM!!!

I was going to make that but BDH took me out to dinner instead. Weird how our brains were in the exact same space. :)
