Why is that?

One answer could be that if everyone just claimed their role, then it would be far too simple to find the baddies and the detective-style Mafia game would be shunted aside for a simpler version of the game called "Who is lying?"

However, I don't want to lose because I'm too polite. I don't really see the difference between saying "I'm not the moon get what I did there? " and saying "I am Sun".

So, if we're doing this, then let's not dance around it. Why not just state our roles at (or near) the outset?

Matt, my dude! You were one of the most special gems in the entire game for me. Your passion and drive and successes were shining examples of what makes it all worthwhile to me. I was deeply grateful that I had a fine player like you in A World Reborn. If the game was made up of 30 Matts, it would have been absolutely spectacular.
