Dieting was popularized in the U.S. by the 27th president, William Howard Taft, who famously had to have a custom bathtub built for the White House, and afterwards made a public effort to lose weight. Contrary to popular belief, there is no evidence that he was ever actually stuck in the bathtub. Prior to this time, the idea of consciously eating less than you felt like eating was somewhat foreign, since mankind had spent most of its history trying to eat as much as they possibly could just to stay alive.

By definition, a diet merely consists of the food and drink a person consumes.

Well, Taft didn't come up with the idea. (I forget who it was) but he was just the first really famous person to do it, thereby popularizing it.
