The Cooking Club [week 7: Osieorb18]
hi everyone!
[mention]Spacedaisy[/mention] and I were interested in sharing recipes with other cooks on here and around our social circles (the more the merrier). The premise of the club is we take turns exchanging recipes where every 1-2 weeks someone shares a new recipe (I think 10 days is a good amount of time), and the rest of the group attempts to make it and shares their results with each other (or not, no pressure if you're not happy sharing photos!).
Let me know who wants in on the fun as I know a lot of you enjoy making stuff in the kitchen. Your recipe can be literally anything; a starter, main, side, or dessert. [mention]Elohcin[/mention], [mention]nutella[/mention] and [mention]SokothQultuq[/mention] have already expressed interest. Don't be shy. And there's no pressure at making every recipe we post; you can try as few or as many as you like.

hi I have decided on this recipe! it's my approximation of a dish this amazing Mexican woman named Amparo made at my college's dining hall for breakfast -- she made amazing breakfast burritos and chilaquiles and stuff, and this particular dish was called Amparo's Special. It's vegetarian and gluten-free and absolutely delicious, especially with the way the salsa and sour cream blend together and combine with the other flavors.
Ingredients, per person:
2 eggs
Fingerling/mini gold or yukon gold potatoes (idk amount, if it’s the larger ones 1 or 2, or a handful of the small ones. probably roughly half a pound per person)
Spinach (roughly 5oz per person so one of those 10oz bags for two people?)
1 small shallot or ½ of a large shallot
To top:
Good-quality Mexican salsa
Sour cream
Cotija cheese
salt and black pepper (+ optional cayenne or chili powder)
First, I get the potatoes going a bit by stabbing them with a fork and microwaving in a wet paper towel for 1-2 minutes. Then, chop them into bite-size chunks, and dice the shallot. Heat vegetable oil in a large skillet and cook shallots and potatoes, stirring to prevent sticking, until browned and softened.
Meanwhile, boil a pot of water for poaching the eggs. The poaching tips and tricks I use: add a little bit of white vinegar to the water, break eggs into ramekins, stir the water to make a whirlpool while you pour the eggs in. Then they should only take about two minutes to keep that yolk nice and runny (I start them around the same time as the next step so that I can plate the veggies and be able to put the egg straight on top.)
Add spinach to the pan with the potatoes and cook until wilted, a minute or two. At some point in this process add some salt to the pan, and potentially a bit of cayenne if you want some extra heat. Once finished, transfer to plate and top with poached eggs. Add a few spoonfuls of the salsa and sour cream (it’ll all mix together and become a magical transcendent creation of deliciousness), crumble a good amount of cotija cheese on there and crack on a bunch of fresh ground black pepper. Yummm

That laugh thing was semi-serious because when I saw this recipe I laughed my ass off. I genuinely thought it was a joke, but they are SOOOOO good. I've done the meatballs on toothpicks as well as the sandwiches, and also with gravy over egg noodles and always people are excited and ask how to make them...but when I tell them they like glaze over at how easy it is.
This is like a "goof off guy hosts a super bowl party" recipe, not like Chez Tim fine dining establishment.

Okay then, here is a recipe for the weekend all you goof off low effort cooks!
The super great award winning Bavarian Meatball Subs, with added options.
In crock pot place meatballs in an even layer across the bottom. (note, if dealing with a large crowd all things can be doubled)
Dump in one packet of onion soup mix, one quarter cup brown sugar, and a couple spoonfuls of red pepper flakes.
Salt and pepper to taste...won't take much.
Rinse the assorted powdery ingredients down into the meatballs by pouring in one beer, brand of your choice.
Blast on high for four hours or more.
I cut the meatballs in half and lay them on the sub roll myself, and put rounded side down pieces anywhere there is a formation that will hold them. REALLY lazy people just pile on meatballs and hope they don't roll off. Option C, I have put meatballs on buttered egg noodles and covered with gravy made by thickening the juice from the crockpot by bringing it to a boil in a saucepan and adding flour. Sprinkle with grated Swiss cheese to taste.

I hid that part because when I was given this recipe I refused to take it seriously and didn't make it for like three months. That was a regrettable choice because it has turned out MANY times and been raved over in all three options despite being seriously...
The super great award winning Bavarian Meatball Subs, with added options.
In crock pot place meatballs in an even layer across the bottom. (note, if dealing with a large crowd all things can be doubled)
Dump in one packet of onion soup mix, one quarter cup brown sugar, and a couple spoonfuls of red pepper flakes.
Salt and pepper to taste...won't take much.
Rinse the assorted powdery ingredients down into the meatballs by pouring in one beer, brand of your choice.
Blast on high for four hours or more.
I cut the meatballs in half and lay them on the sub roll myself, and put rounded side down pieces anywhere there is a formation that will hold them. Yeah I should have mentioned that. On an NFL Sunday I start them an hour before the first game to serve them with toothpicks at the start of the second game, and by halftime of the first game managing the crowd can become challenging.

I made meatball subs using [mention]Timsup2nothin[/mention]'s recipe! Except I also made the meatballs from scratch :P Very tasty And on the side is my favorite summer salad, spinach with nectarines, goat cheese, hazelnuts, and balsamic vinaigrette

Two things I did differently:
First, I don't microwave potatoes.
Second, instead of cayenne, I added a generous amount of Secret Aardvark habanero sauce.
I didn't expect that I would enjoy this, but I was pleasantly surprised. All of the flavors work (and that hot sauce makes it work even better).
