I sliced it up and sauteed it with the sausage, along with a pinch of seasoned salt and Italian seasoning. But I have baked summer squash before, with parmigiana cheese. Another way that I like to cook zucchini is to scrape out the insides and then mix them with other stuff, such as cheese, mushrooms, and sweet red peppers, and then stuff the emptied out zucchinis with the mixture.
